Coarsely grind 1 pound walnuts.
Combine walnuts with 1/2 cup sugar, 1 tsp cinnamon, & 1/2 tsp nutmeg.
Melt 1 pound butter.
Brushing each layer with butter, place 12 layers philo dough in a 9 x 13 buttered pan.
Sprinkle a 1/2 cup walnut mixture evenly over top.
Add another 3 layers buttered philo. Repeat nut layer, 3 philo layers until nut mixture is gone.
Layer final 12 layers buttered philo. Butter top and place in refrigerator for at least 30 minutes.
SYRUP: 3 cups white sugar, 1 1/2 cups water, 2 Tblsp freshly squeezed lemon juice, 1 cinnamon stick
Stir over medium heat til sugar dissolves. Bring to boil stirring occasionally for 10 min.
Slowly add 1/2 cup honey. Bring to boil stirring constantly for 5 minutes.
Remove from heat, let cool, & discard cinnamon stick.
Slice layers using a clean ruler to create diamonds. (My freehand method looks bad. I need a ruler!)
Place 1 whole clove in each piece, even small ones. Preheat the oven to 400*
Bake 15 minutes at 400* then reduce oven to 350* and continue baking 45-50 minutes til golden brown.
Gently spoon cooled syrup evenly over pastry.Let sit in a cool dry place 24 hrs.Serve in muffin cups
