Heat oil on sauté mode

Add one tsp cumin seeds and 3 chopped onions

Sauté onions till translucent and the edges start changing colour

Add a tbsp each of ginger and garlic paste

Add 1 tbsp chili powder, 2 tsp salt, 1 tsp coriander powder, 1/2 tsp turmeric

Cook 2lbs beef cube, stirring to brown the meat

Add in 4-5 chopped tomatoes

Add 2 cups water

Manual for 30, natural release or quick - either is fine

Put the instant pot on sauté mode (high) to dry up the liquid, use your spoon to break up the cubes

When the beef is this dry then sauté for a few minutes for a richer color

Mix in 3/4 cup yogurt

Add one tsp garam masala and adjust seasoning

Serve garnished with chilies, cilantro, lemon and julienned ginger (optional)
