Par boil 500g potatoes then peel and cut into 1.5 inch pieces when cool enough to handle
Sauté one diced onion until it starts to darken then 1 tsp garlic and 1/2 tsp ginger paste
Add 2 sliced tomatoes and 3-4 tbsp biryani masala to the pan and sauté until the tomatoes soften and oil rises to the top
Then add your parboiled potatoes, mix well and steam through for 10 minutes - YUM
Plate up and top with cilantro, mint and chilies
