Biscoff Mousse Tart
For base:Blitz a pack of lotus biscoff cookies. Add in 6 tbsp melted butter. Spread out onto base of tart pan. You can bake for 5-6 mins (optional)

For Mousse: - Melt together 1.5 cups chocolate chips, 3/4 cup Creamer (optional) - else replace with regular cream, & a pinch of salt. Keep aside

Prepare gelatin: 1/2 tbsp gelatin with 2 tbsp cold water. Mix. Keep aside

Whisk 1 cup heavy cream till stiff peaks form.

Melt gelatin & mix it into choc mixture

Gently fold in cream (first 1/2, then remaining) till well incorporated.

Pour mixture over cookie base

Garnish with toffee bits / cookie crumbs / or any other topping if you like

Melt 1/2-3/4 cup Biscoff Lotus Spread and pour over tart. Refrigerate a minimum of 4 hours (best overnight) till it sets
