Blissful And Indulgent Creamy Pink Grapefruit Bars are just like lemon bars but with the distinctly sweet flavor of pink grapefruit.
Combine flour, both confectioners and brown sugar, and butter in a food processor. This is the TASTY shortbread base! Pulse until it all clumps.

If you don’t want an overly sweet shortbread, omit the brown sugar. It’s only a teaspoon and won’t diminish the citrus flavor.
Remove the dough from the barrel and press onto the bottom of the prepared cake pan.

I use a flat-bottomed measurer to tamp the shortbread down to where it’s more or less even. It needn’t be perfect! Bake for 20 minutes.
Pulse sugar and flour, then adding eggs. Add zest, juices, and pulse again until well mixed. The combination of juices will not bake up ‘pink’ per se.

Add 3 to 5 drops of PINK food coloring if you want the bars pink as I show in my photos. 3 drops yielded me a nice pretty pastel pink.

Pour the citrus curd over the hot shortbread and bake an additional 20 minutes and no longer jiggles. The top will be a golden brown when finished.

As it often happens, these bars may crack on the top. It's okay, as they will be finished with a dusting of confectioners sugar in the end.
Allow the bake to cool in the pan, about 1 hour. Then refrigerate for 2 hours or until sufficiently chilled. These must be chilled to cut!

Use a sharp knife that has been run under hot water then dried to cut 9 squares, then each square in half into 18 bars.
