Blushing Roasted Heart Potatoes
Using Blushing Belle or baby red potatoes, cut in half & cut out heart shapes.

Drizzle with olive oil, Italian seasoning, coarse salt & pepper. Mix well.

Lay out on a parchment paper lined sheet pan. Sprinkle with fine shredded parmesan cheese.

Bake 425°F approx. 15 mins.

Add to your favourite serving bowl, garnish with fresh rosemary & serve with your family's favourite main dish.

Chop up leftover potato scraps, bag with a bit of water & white vinegar, & use in soups or breakfast hash.
