Bourbon Pecan Pie with Chocolate Cookie Crust
Gather crust ingredients: chocolate sandwich cookies and butter.

Preheat oven to 350F. Crush cookies into crumbs. Stir in melted butter.

Press crumb mixture into pie plate. Bake for 8 minutes. Remove. Lower oven temperature to 325F.

Gather filling ingredients: pecans, corn syrup, brown sugar, molasses, bourbon, eggs, butter & salt.

Add eggs, corn syrup, brown sugar, molasses, bourbon, vanilla, salt & butter to a large bowl.

Whisk until smooth.

Pour pecan pie filling into crust. Bake for 30 minutes uncovered & 15-30 minutes covered.

Pie is done when edges are set & middle barely jiggles. Cool for at least 2 hours before serving.
