Braised Chicken

Cook 4 sliced bacon until crisp

Slice 1 large leek.

Working in 2 batches brown chicken skin side down. About 5 min flip for an additional minute.

Repeat with legs

Add leeks cook 1 min., add 4 pressed garlic cloves cook until fragrant 30-40 secs.

Add 1/2 C cooking wine. Reduce for 3-4 min.

Stir in 2 tbsp of all-purpose flour.

Add 3 tbsp butter and 1 tbsp Dijon Mustard.

Add 2 C chicken broth.

Add bacon and 5 sprigs of thyme to pot.

Add chicken back to pan.

Place 2 C of baby spinach on top of chicken.

Cover and cook for 13-15 minutes.

Enjoy with mashed potatoes, rice or pasta.
