Braised Short Ribs!!
Chop two shallots

Chop one onion

Dice three carrots

Season short ribs with salt and pepper

Cook diced pancetta; remove when browned

Sear all short ribs 45 seconds per side; remove from heat

Add 2 tsp oil; Saute carrots, onion and shallots for 2 minutes

Add two cups red wine, turn heat to high, bring to a boil. Cook for two minutes

Add 1 tsp salt, 2 cups beef or chicken broth

Add your pancetta back in

Add short ribs

Add two sprigs each rosemary and thyme

Cover and bake at 350° for 2 hours; then bake at 325° for additional 30-45 minutes. Let's sit for 20 minutes covered.

Ribs should be fall off the bone tender

Serve over potatoes or polenta, and enjoy!
