Breakfast Potatoes

4 (I like a mix of white and jewel)
Sweet Potato

1/2 tbsp dried, crushed or 2 tbsp fresh
Rosemary

Smoked Paprika

Garlic Powder
1/2-1 tsp
Sea Salt
1/4 tsp
Black Pepper
1/2 tsp or light spray
Spray Avocado Oil
Slice a bit off the bottom of each sweet potato so each sweet potato sits on cutting board flat.

Cut potatoes, red bell pepper and optional red onion into 1" cubes.

Spray lightly with avocado oil, add spices and toss to coat.

Spread evenly on large bar pan.

Bake on 425 for about 30 minutes, flipping once about halfway through.

Remove from oven and remark about how beautiful it is and how good it smells. 😍
