Sauté veggies in a bit of olive oil
Add a tbsp butter and arborio rice and "toast" it, stirring often.
In a separate pot, warm stock (i added enrichables pea protein, kale & fiber) and chicken broth ...
which adds extra vitamins, protein and nutrients ... and flavor.
Add one ladle of warm stock at a time and stir.
You'll notice it gets absorbed into rice ... then add next ladle
Risotto takes time ... stirring makes love. 💛
Added fresh thyme and basil from herb pots
Grated fresh parmesan (the good stuff) ... a little goes a long way.
Add the sautéed veggies back in skillet, stir together
Add fresh herbs and grated parm ... stir together
Dinner is ready. Enjoy!
