Sauté veggies in a bit of olive oil

Add a tbsp butter and arborio rice and "toast" it, stirring often.

In a separate pot, warm stock (i added enrichables pea protein, kale & fiber) and chicken broth ...

Add one ladle of warm stock at a time and stir.
