Broccoli Cheddar Frittata
Prepare your ingredients. Preheat oven to 350F.
In a medium bowl, whisk together the eggs, heavy cream, salt, and pepper until well blended. Stir in cheese. Set aside.
In a skillet or Dutch oven, melt the butter over medium heat. Add the shallot, garlic, and broccoli and cook until just tender, about 3-4 minutes.
Spread vegetables out around the pan, then gently pour the egg mixture into the pan. Cook for about a minute, until the bottom just starts to firm up.
Place the pan in the oven and cook for about 12-15 minutes or until it’s just barely jiggly in the center. It will firm up more as it cools.
