Buckwheat Galette with Ham and Cheese
You need: buckwheat flour, egg, milk, maple syrup, salt. Plus ham and cheese for the filling!

Pour buckwheat flour, egg, salt and half the milk into a bowl.

Whisk until smooth.

Add the rest of the milk and the maple syrup. Whisk until smooth.

Heat butter in a cast iron skillet.

Add 1/3 cup of the batter and tip the pan around so the batter thinly covers the bottom.

Cook for 3-4 minutes until the bottom is getting crisp then add the cheese until it begins to melt.

Add the torn ham.

Fold the galette in half.

Then fold in half again. Remove from the pan and continue with the next galette.
