1 cup or 75 grams
1 Broccoli Head
1/2 cup or 50 grams
2 Medium Eggplant
1/4 cup or 30 grams
Green Bell Pepper One Inch Dice
1/3 cup or 50 grams
Red Bell Pepper 1 Inch Dice
2/3 cup or 70 grams
Medium Carrot, Cut Into Thick Sticks
1 medium or 182 grams
Yukon Gold Potato
1 small or 100 grams
Yellow Onion, Sliced

1 can or 1 cup fresh

Start off by prepping your veggies

Heat a large skillet on medium high heat and add in about 2T neutral oil

And 1 1/2T Shan Foods ginger garlic paste. Cook until fragrant.

Add in your sliced onions ...

Stir for about 30 seconds and add in the cubed potatoes.

Now add in about 1/4 cup of strained tomatoes, 3/4 packet of Shan Foods Murgh Cholay spice packet...

Cauliflower, carrots, eggplant and about 1/3 cup water. Cover and let steam.

While the veggies cook, wash and prep your rice.

Add in 1T oil for each cup of rice, and about 1 1/2t Shan Foods Pink Himalayan Salt

Check on your veggies, you want some liquid as it cooks add more if needed.

Now add bell peppers, broccoli and one can or 1 cup cooked fresh/frozen chickpeas.

Bring rice to a boil on high heat, slow and cover for ten minutes. Check on your veggies.

Once the potatoes & carrots have softened, garnish with a squeeze of of lemon juice and cilantro.
