Buffalo Chicken Jalapeño Poppers
10 jalapeño peppers, 1 pound chicken, 4 oz cream cheese, 4 oz cheddar cheese, 1/3 cup buffalo sauce, 10 slices bacon.

Preheat oven to 375F.

Line a baking sheet with foil. Place an oven proof wire rack on top.

Cut each pepper in half lengthwise. Use a small spoon to scrap out the seeds.

Combine chicken, cream cheese, and cheddar cheese. Blend well

Add buffalo sauce and continue to mix until blended.

Fill each pepper with chicken mixture. Wrap with half slice of bacon. Secure with a toothpick.

Place peppers on the wire rack.

Bake 25 minutes. Broil 1-2 minutes for crispier bacon.
