Butter And Tomato Poached Fish
Melt 1.5 tbs butter in a pan over medium-high heat
Add 1/2 yellow onion and sauté. Add 1 garlic clove, pressed and 1 can (14.5 oz) of diced tomatoes and 1 can (15oz) of tomato purée. Bring to a boil.
Nestle 12 oz white fish (cod, tilapia, halibut or rockfish) into the sauce. Add a pinch of salt to taste.
Cover the fish in tomato sauce and cook for 5 minutes or until fish is cooked through.
Add in 1.5 tbs butter and 6 oz kale and 1 tbs freeze dried chives
Sprinkle in 2 tbs grated Parmesan cheese
Serve and enjoy!
