Buttermilk Skillet Cornbread
Place an 8 or 9 inch cast iron pan in a cold oven and preheat to 400°F.

Whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt.

In a separate bowl, combine eggs, buttermilk, and sour cream.

Mix in cooled, melted butter.

Add the wet ingredients to the dry and stir to combine. For tender bread, don’t over-mix!

Swirl butter around the bottom and sides of the pre-heated pan.

Spoon or pour batter into the hot pan. The edges will start to set immediately.

Bake 20-25 minutes, until golden. Cool for about 15 minutes before slicing.

Serve with butter, maple butter, or hot (spicy) honey butter for a kick!
