1/2 cup shredded
Cut the top and bottom off butternut squash and peel.
Slice at 1/8” on mandolin.
Drizzle squash circles with olive oil and salt. Bake @ 375F for 15 minutes.
Heat a cast iron pot to medium. Add olive oil. Break apart and brown sausage.
Remove excess fat with a turkey basted. Add wine and stir.
Add tomatoe sauce and cook for 15 minutes.
Layer squash, meat sauce, cheese and repeat until dish is full. Top with Parm. Bake @ 375 for 20 min
