In a large bowl, combine green cabbage, red cabbage, and carrots
In a microwave safe bowl, mix apple cider vinegar, soy sauce, Dijon mustard, and sesame oil. Then microwave 15-20 seconds until warm
Stir in sugar until it’s dissolved
While constantly whisking, stream in olive oil until dressing has thickened
Pour the dressing over the cabbage mix and combine. Optional: chill for 30 min before devouring!
