Cajun Chicken Alfredo Pasta
What you’ll need: chicken breasts, avocado oil, Cajun seasoning, whole wheat pasta, garlic, cream cheese, 2% milk, Parmesan, tomatoes, & spinach
Butterfly your 2 chicken breasts (about 1 lb)

Season chicken on both sides with 1 tablespoon Cajun seasoning

Heat 1 tablespoon avocado oil on medium heat and sauté your chicken for about 4-5 min

Flip the chicken and cook for another 4-5 minutes. Set aside to cool, then dice it up!

Heat another tablespoon of avocado oil, and sauté the garlic for about a minute. Add 1.5 cups of 2% milk and 4 oz cream cheese, whisk until melted

Add 1/2 cup Parmesan cheese and 1 tablespoon of cajun seasoning, stir!

Add diced chicken, and 2 cups of fresh spinach. Stir until the spinach is wilted

Add cooked whole wheat noodles (8 oz dry) and stir until coated with sauce

Plate it up (makes 4 servings), then top with diced Roma tomatoes!
