Boil sweet potatoes in water until just fork tender. Remove skin & slice into 2-inch rounds.

Place in a casserole dish. Pour pineapple juice over the tops and sprinkle on brown sugar.

Top with pineapple slices and cherries.

Cover with foil and bake 45 minutes or until potatoes are tender and juice has thickened.
