Lightly brown 1lb chicken in oil.

Add 2 carrots & 2 celery stalks sliced thin. Cook 5 minutes.

Add 1.5cups chicken broth, 3Tbsp soy sauce, can of water chestnuts and 1/2tsp ginger.

Bring to a full boil, then add 1.5 cups minute rice.

Remove from heat. Cover and let stand 5 minutes.

Fluff with fork and enjoy!
