Season the chicken after washing it with lime

Burn the sugar in a little oil to create a browning

Add the chicken to the browning and stir

Add the herbs to the chicken

Add lentils to the mixture and cover with water

Add carrots to the mix and leave to simmer for 30-40 minutes

Once the water reduce and lentils are soft add in the rice

Let the pelau simmer until the rice is cooked and there is little water remaining
