Carrot Cauliflower Quinoa Salad with Sunshine Dressing
Add chopped cauliflower and carrots to a baking sheet and drizzle with olive oil

Sprinkle veggies with turmeric, cumin, cayenne, garlic powder, salt, and pepper

Toss well to combine the oil and spices

Add quinoa and water in a medium pot and cook until done

Spoon the cooked quinoa and veggies into a large bowl

Add green onion, cilantro, parsley, dates, peas, and pistachios and toss thoroughly

Make the sunshine dressing: Mix together tahini, lemon juice, grated ginger, maple syrup, turmeric, garlic powder, and salt

Add cracked pepper and whisk together

Pour the dressing over the salad and mix well to combine. Add more pistachios on top if desired!
