Salt steak on all sides. Place on wire rack, uncovered, over night or for at least two hours.

Preheat cast iron pan to medium-high. Run veg oil all over steak and place in pan.

Cook 4min per side. Use a different side of the pan each time you flip for even heat distribution.

Remove steak to a plate and cover with foil. Turn of heat and wipe out pan with a wet paper towel.

Add cognac and turn back on heat. Cool for 30 seconds and add beef stock.

After 3-4 minutes and the sauce has reduced, add heavy cream and black pepper. Cool another 4 min.

After the sauce has thickened it’s ready to serve.
