Cauliflower Potato Soup

Peel 1 1/2 lbs potatoes and cut in half lengthwise.

Add potatoes to RockCrok and add 1/2 cup vegetable broth. Microwave for 11 minutes.

Chop 2 cups cauliflower

Grate 4 Oz sharp cheddar cheese, plus some for topping

Flip potatoes and add cauliflower. Microwave for 7-9 minutes.

Coarsely mash the potatoes and cauliflower.

Add 3 cups milk, 2 tbsp butter, and 1 tbsp Three Onion Rub.

Stir. Microwave for 4-5 minutes.

Temper 1/2 cup sour cream by adding a few tbsp of soup.

Add tempered cream to soup and stir.

Add cheese, season to taste and stir.

Plate and garnish with bacon, scallions or cheese.
