Cauliflower Shepherd's Pie
Add 1/2 cup water, 1/2 tsp salt, and a 2-3 lb head of cauliflower to the Deluxe Cooking Blender. Use the HEATED PUREE setting.
Cook 2 lbs of ground beef in Rockcrok Dutch Oven for 7–9 minutes, or until the beef is no longer pink, breaking into crumbles with the Mix 'N Chop.
While the beef is cooking, use the Microplane Adjustable Coarse Grater to grate 2 large carrots.
When the beef is done, drain the liquid. Sprinkle 1/4 cup flour over the beef and mix to combine. Add the carrots to the pan and start on the sauce.
Whisk 1/4 cup tomato paste, 1 1/3 cup beef broth, and 2 tbsp Worcestershire sauce in a bowl. Simmer the liquid, uncovered, for about 5–6 minutes.
Grate 4 oz of cheese with the grater. Remove the pan from the heat and stir in the peas. When the timer is up on the blender, press CANCEL.
Pour the cauliflower puree over the beef mixture and top with the cheese. Broil for 3–4 minutes, or until the cheese is bubbly and slightly browned.
