Mix the yeast, water, eggs and oil in the bowl of your stand mixer

Then add the salt, sugar and flour -- start mixing w the dough hook

Scrape down the sides

Then continue kneading with the dough hook until all the flour is absorbed

Check the dough - if still sticky, add an 1/8 cup flour at a time and knead. Check again.

Place dough on a floured surface or parchment and make a whole in the middle and let it rest.

While dough rests for 30 minutes, make your filling

Divide your rested dough into 8 pieces

Flatten each piece, fill, roll, and form into a circle

After they rest/rise for 30 minutes, brush each with egg wash

Place the egg washed rolls into the oven - 375 for 5 minutes, then 350 for about 22 minutes
