Cheddar Broccoli Risotto With Chicken!

Let’s make a super yummy and fast dinner in our Quickcooker! Gather your ingredients.

Cut red pepper and onion into chunks.

Finely chop the pepper and onion in the manual food processor.

Pump the handle until it looks like this.

Turn Quickcooker to sear and add oil and mince your garlic in the garlic press.

Add chopped red pepper and onion. Sauté for 4 minutes.

Add 1 cup Arborio rice mix and press cancel.

Cut chicken into bite sized pieces.

Add 3 cups of chicken broth.

Add 1 tablespoon of Dijon mustard.

Mix together and secure lid.

Set Quickcooker to white rice setting. You will see these lines while it comes to pressure.

The 4 minute time will pop up when it begins to cook.

While it cooks grate 4 oz of sharp cheddar cheese with our Microplane adjustable coarse grater.

Cut 2oz of cream cheese into cubes.

Chop two cups of broccoli florets into small chunks.

When the time is up press the pressure release to release all of the pressure.

Add your cheeses and stir.

Add broccoli and stir, set pan to sear.

Sear for 5 minutes until broccoli is tender. Then juice half of a lemon into the rice and mix.

Serve with extra grated sharp cheddar cheese and enjoy!
