Cheddar Broccoli Risotto with Chicken
Chop 1 medium onion with the Manual Food Processor.

Chop 1 medium red bell pepper.

Press 2 cloves garlic into veggies.

Cut 1 lb. chicken tenderloins into bite-sized pieces.

Set the Quick Cooker to Sear, press Start, and heat 3 tbsp. olive oil for 3 minutes.

Add onion, bell pepper, garlic, and 1/2 tsp. salt. Cook uncovered for 4 minutes. Stir frequently.

Add 1 cup Arborio rice, 3 cups chicken broth, and 1 tbsp. Dijon mustard. Stir to combine.

Lock the Quick Cooker lid, set to White Rice, and press Start.

Chop 2 cups broccoli florets.

Shred 1 cup sharp cheddar cheese.

Cube 2 oz. cream cheese.

When the Quick Cooker timer is up, press the steam release button to manually release the pressure.

Stir in broccoli and cheeses until well combined. Set Cooker to Sear and cook uncovered 5 minutes.

Stir in 2 tbsp. fresh lemon juice before serving. Yum!
