Set Quick Cooker to SEAR and heat oil in inner pot for 3 minutes.

Chop onion and bell pepper(remove seeds).

Cut chicken into 1 inch pieces.

Cut and wash head of broccoli into floret pieces.

Add onion, bell pepper, salt and garlic pressed with Garlic Press to inner pot.

Cook uncovered for 4 minutes, stirring frequently. Press cancel after the 4 minutes. Sizzle sizzle!!

Grate 1 cup of cheese.

Add rice.

Add broth, chicken & mustard then stir well.

Lock lid and select WHITE RICE setting and press START.

When timer goes off press CANCEL and release pressure. Anybody else singing some Queen? No, just me?

Stir in cheeses and broccoli until well combined.

Set to SEAR and cook for 5 minutes, stirring frequently to avoid scorching cheese.
