Cheesecake Stuffed Baked Apples Recipe
Preheat your oven to 350 and line a baking sheet with parchment paper
1
In a large bowl, beat together cream cheese, plain Greek yogurt, and sugar until smooth
2
Add in egg whites and vanilla. Beat until well mixed
3
In a small bowl, toss together rolled oatmeal, brown sugar, and a pinch of cinnamon
4
Stir melted butter into the oat mixture. Mix until crumbly and evenly coated
5
Cut 2 apples in half and use a small knife to cut a hole in the center of each half (be careful not to cut through the bottom of the apple!)
6
Rub 1 teaspoon of brown sugar (or coconut sugar) in each apple half and sprinkle with a pinch of cinnamon
7
Place the apples onto the prepared baking sheet. Divide the cheesecake filling evenly between each half filling to the top
8
Divide the crumble topping evenly between each apple pressing lightly so that it covers each half
9
Bake for 30 minutes, or until the filling just feels set. Turn the oven to broil on high. Drizzle maple syrup over the apples and broil
10
After broiling for 2-3 minutes, DEVOUR!
