Cheesy Chorizo & Cornbread Casserole
Cook 2 lbs ground chorizo with 1 diced onion and 1 diced green pepper over medium heat.

Cook covered until chorizo has turned brown and fat has rendered. Drain chorizo and set aside.

In a large mixing bowl, combine stuffing mix, chorizo, 1 cup cheddar cheese, salt, and chicken stock

Add mixture to a greased 13x9 casserole dish. Cover with aluminum foil and bake at 350°F for 40 min
