Cheesy Corn & Poblano Quesadillas
Thinly slice a shallot using the Simple Slicer.

Drain corn.

Core & deseed poblano pepper.

Dice pepper into 1/2” pieces.

Mince cilantro using Herb Mill.

Slice lime.

Heat drizzle of oil over medium high heat.

Add shallot & pepper.

Cook 4-5 minutes until tender.

Dry corn on towel.

Add corn to skillet.

Add 1 tbsp Southwest spice.

Add half of cilantro.

Add juice of half of lime.

Rub or spray oil on one side of tortillas.

On one side of tortilla, add pepper jack cheese...

Top with veggie mixture.

Fold over. Cook on griddle or broil in oven until browned on both sides.
