Cheesy Keto Pizza Casserole
In a large pan, cook and crumble ground italian sausage on medium high heat.
Add onions to pan & let brown. Then add garlic, peppers, & mushrooms, & cook until lightly browned.
In a 9x9 casserole dish, layer 1/2 the sausage, a layer of ricotta cheese, parmesan, & mozzarella.
Add a layer of vegetables, a layer of pepperonis, and a layer of diced tomatoes on top.
Layer the remaining meat, layer of cheese, & the rest of the veggies & tomatoes. Top with olives.
Cover casserole with foil and bake for 20 minutes, until casserole is hot and bubbly. Enjoy!
