Cheesy Onion Garlic Bread!

Combine flour, yeast, water to make your dough. Let sit in the fridge overnight.
Work with your dough on a lightly floured work surface.
Cut your dough in half using a very sharp knife.
Shape your dough into 2 loaves.
Dust your baking sheet with flour and place the 2 loaves on the pan.
Score your bread with 3 deep cuts. I used kitchen shears for this.
Cover lightly and let rest for 45 minutes. Preheat your over to 475 degrees Fahrenheit.
Uncover and reshape your loaves.
Now for the fun part... stuff your loaves with onion and garlic.
Top with shredded manchego and gruyere cheese.
Coat with olive oil before baking.
Bake at 475 for 25 minutes. Place a pan of water under the baking sheet for extra crispy crust.
Remove your bread from the oven and let cool for 5 minutes before slicing and serving!
