Chewy Ginger Molasses Cookies
Soft butter mixed with sugar (you can use an electric mixer)

Add vanilla and molasses

Add spices and grated fresh ginger

Sift dry ingredients over the batter in 2 parts

I like to use a spatula to integrate the flour to avoid over beating

Wrap in plastic and refrigerate for a few hours until firm

Leave them plain or roll in sugar before baking
