Chicago Style Cheese And Sausage Stuffed Pizza
place yeast, sugar and warm water in the bowl of a standing mixer ~ let sit for 5 minutes to activate the yeast

add flour and kosher salt ~ mix thoroughly

the pizza dough will be dry and crumbly

add whole eggs and egg yolks

add dried minced onions and Parmesan cheese

add melted butter and mix to combine ~ mix or knead on low speed for 8 minutes

form the pizza dough into a disk, place in a bowl, cover and let rise for 1 hour

brown the Italian sausage and grate the mozzarella

make homemade marinara

sprinkle pan with cornmeal

divide dough in half

roll out the dough on a lightly floured surface

place the bottom crust in pan, top with mozzarella and cooked Italian sausage

roll out the top crust and place on top of the mozzarella and Italian sausage

crimp the edges to seal in the mozzarella and Italian sausage

top with marinara

bake in a preheated 450 degree F oven on a pizza stone for 25 - 30 minutes

the crust will be golden brown and the mozzarella will be charred in some spots when the pizza is done baking
