Chicken & Chorizo Paella
In a large cast iron skillet: brown Spanish chorizo on both sides, remove. Add chicken breast, paprika, salt/pepper, & cook through .

Sauté diced yellow onion & red bell pepper. Add minced garlic, sauté an additional minute.

Add white wine to deglaze the pan. Allow the wine to reduce by half.

Stir in: diced tomatoes, chicken broth, pinch of saffron, & turmeric. Bring to gentle boil.

Add in paella rice & stir once to evenly disperse. Cover & cook undisturbed for 20 minutes.

When liquid has been fully absorbed add: peas, manzanilla olives, & parsley. Mix all together.
