Chicken, peas, curry paste, onion, coconut milk, red lentils, sweet potato, coriander and frozen peas.

Peel the sweet potatoes.

Cube the sweet potatoes.

Slice the onion.

Cube the chicken thighs.

Add the onions to the oil in your pot.

Add the curry paste to the pan.

Coat the onions in the curry paste.

Add the chicken and fry, mixing into the curry paste and onions.

Add the coconut milk.

Add the lentils.

Add the sweet potato.

Store and cook! Instant pot- 25 mins. Slow cooker 8 hours low/4hrs high. Pressure cooker- 40 mins. Stove 1 hour.

Add the peas.

Add the coriander. Cook 10 mins more until sauce has thickened.

Serve with rice and naan breads.
