Chicken Chimichanga
Gather all your ingredients
Clean chicken tenderloins. Rinse well under cool water with salt and lemon juice

Season chicken with garlic powder, cajun, italian herbs, onion powder

Heat oil in skillet, add chicken, diced onions, diced bell peppers and sprinkle with herbs. Let sear until browned on both sides

Turn and sear on other side and mix all those flavors..

Once browned on both sides, add in chicken broth to slightly cover the chicken in pan and let marinate until it come to a soft boil. Then cover

While chicken is simmering make a quick pico with red onion, cilantro, tomatoes and bursts of lime. Sit aside

Then add in a can of green chilies to chicken,stir to incorporate and simmer for 5-7 minutes.

Grab a burrito tortilla. Place cheese, chicken, then cheese again. fold into a burrito

Place burrito into a skillet with oil and fry on each side for 3mins.

Look at that golden brown beauty!

Drain each burrito on a lined paper towel dish. Let rest for 5 mins and then you have this cheesy goodness!

Add some salsa, pico, lettuce and sour cream. Dress it how you please! Its your Chimi!!!
