Chicken Curry - Using Homemade Spice Mix
Marinate the chicken with Salt, Turmeric Powder, Mustard Oil & Vinegar
Dry roast the Whole Spices on a skillet on a low heat
...till they start to smoke and become brown. Turn off the heat, let them cool down completely before grinding into a fine powder
Heat Mustard Oil (or any other oil) in a pan and drop a Bay Leaf
Now, add the Onion, Ginger, Garlic and Tomato paste and fry
Once it is fried, add the marinated chicken, spice mix and water. Let it simmer for 15 minutes with lid closed.
Check for seasoning. Finish with a garnish of finely chopped coriander leaves.
