Shred 2 lbs of chicken, I used leftover chicken.

Add I can green chilli

Add one block of room temperature cream cheese

Mix shredded chicken, chilli, & cream cheese until all ingredients are incorporated

Add 5 tablespoons of enchilada sauce

Line the bottom of your baking dish with enchilada sauce

Place 3 tablespoons of chicken cheese mixture in the middle of tortilla of your choice

Fold your tortilla with mixture

Place all filled tortillas into your baking dish

Add your enchilada sauce on your enchiladas.

Add a shared cheese of your choice. I used a Mexican blend of cheeses

Place in preheated oven at 350Β° and bake for 30 minutes

Remove from oven and let rest 10 minutes

Dish and top with favorite toppings and enjoy
