Boil macaroni in water according to the package instructions. Drain off any excess water, and leave the macaroni to cool down completely.
Meanwhile, boil your chicken in water on the stove for around 10-15 minutes. Use two forks to shred the meat. Leave the chicken to cool down.
Combine diced onion, celery, carrots, and peppers in a bowl. Add mayonnaise, Dijon mustard, chilled cooked macaroni and chicken. Stir to combine.
