Chicken Parmesan Pasta in the PC Quick Cooker
Heat 1 Tbs of olive oil in the Quick Cooker. Cube chicken and mix in 3 Tbs of garlic herb rub (I used 1/2 garlic powder and 1/2 herbs de province)

You may need to split the chicken into 2 batches. Use a Tbsp of olive oil for each batch.

Sear each batch for 7-8 min, until browned. It doesn’t need to be cooked through.

Add 24 ounces of your favorite jarred pasta sauce.

Add 1 cup of Water

And a box of penne pasta. Stir to mix. 😋

Lock the lid in place. Make sure the valve is square so it will pressurize. When the red button is below the surface, it’s ready to cook.

Use the “custom” setting and adjust the time to 5 min. Once the cooker pressurizes, the cooking begins!!

In the meantime... melt a Tbs of butter and mix in 1/4 cup of seasoned panko bread crumbs.

Mix and then microwave on high for 30 seconds til crumbs are browned

Prepare 1/2 cup of Parmesan cheese for the next add

When the timer is up, press the pressure relief valve to release the steam. When the red button pops back up, it’s safe to open.

Oh, so bubbly and smells SO good!

Add Parmesan cheese and stir to mix it in

Add about 1 cup of Mozarella Cheese. (More of you’d like 😁)

Cover for 2-3 minutes. (Note the Quick Cooker automatically goes into warming mode when the cooking time expires! 🤯)

Ready to eat!!!

Plate and sprinkle on your toasted panko bread crumbs. Bon appetit!!
