Chicken, Potatoes & Brussel Sprouts w/ Pesto
Wash a bag of multi-color potatoes

And a bag of Brussel sprouts

Trim ends and halve Brussel Sprouts

Place potatoes and Brussel sprouts on a sheet pan

Spritz with oil and sprinkle on your favorite seasoning

Cut boneless, skinless chicken breasts in half (it helps the chicken cook faster)

Pat the chicken dry with a paper towel

Add rack to sheet pan and place chicken on rack, then spritz with oil and season to taste.

Bake at 400 for 60 min, or until chicken reaches 165 internally
