Chicken Satay With Peanut Dipping Sauce
Soak your skewers in water for at least 20 minutes to prevent from burning.

Remove the tendon from 1 pound chicken tenderloins by using a fork.

Skewer the chicken tenderloins.

Sprinkle the chicken skewers with curry powder on both sides.

Wash your hands to prevent cross contamination and then sprinkle with salt on both sides.

Drizzle with olive oil or avocado oil. Preheat a grill pan over medium heat.

When the pan is hot add the chicken making sure the skewer part is hanging off the side to prevent burning.

Grill for 3-5 minutes per side or until fully cooked. Then remove and set aside.

Make the sauce by adding 1/4 cup sugar to a small saucepan.

Then add 3/4 cup peanut butter.

Add 3/4 cup water.

Add 2 tablespoons soy sauce.

Place on the stove over medium heat.

Stir with a whisk until melted and combined. Take off the heat.

You can thin it out with water if it gets too thick. Then add 2 tablespoons rice vinegar and stir to combine.

Serve the chicken with the peanut dipping sauce.
