Chicken Sausage & Poblano Enchiladas
Add ground chicken, chopped poblanos and onions to skillet. Cook until veggies are softened.
Add taco seasoning and 1/4 cup water. Bring to a boil and simmer on low 10 min.
Preheat oven to 375. Add enchilada sauce to bottom of pan. Take uncooked tortilla, fill & roll.
Roll all your tortillas to fill the pan. Smother with more sauce & crumbled goat cheese. Bake 20-30
Once cheese is golden brown and sauce is bubbly, let cool. Top with avocado, tomato, or salsa!
