In a dutch oven or pot put some olive oil and add 1 chopped onion.

Add chopped parsley.

Add 2 chopped carrots and 1 chopped celery and cook them for 3 min.

Add the chicken broth. The quantity of broth varies since I used leftover chicken.

I added my chicken shunks and cooked for 10 min and then added the uncooked rice. Cook for 15 min, closed with the lid. Season with salt and pepper.
