Chicken Tortilla Soup
Add oil to a large pot preheated over medium heat.

Chop all the vegetables: carrots, zucchini, onion and celery.

Add the vegetables to the pot. Sauté for 5-7 minutes.

Add canned tomatoes and shredded rotisserie chicken.

Add the chicken stock.

Add the seasonings. Cook for an additional 10 minutes or until the soup is simmering.

Ladle the soup into bowls and top with avocado, tortilla strips and Cotija cheese.
